About Mustard Seed Oil

Mustard essential oil (volatile oil, not fixed cooking oil) is produced by steam distillation of defatted mustard seeds after sinigrin has been hydrolysed to allyl isothiocyanate. Extremely pungent — used in small amounts for flavouring mustard condiments and as a rubefacient in pharmaceutical preparations. Distinct from the fixed mustard cooking oil.
