About Cassia
Cassia is the dominant commercial cinnamon worldwide — bolder and more assertive than true Ceylon cinnamon. The standard in most global spice blends, baked goods and commercial preparations. India and China are the primary producers. Cassia bark is thicker and rolls as a single layer unlike multi-layered Ceylon quills.
