About Cassia

Cassia is the dominant commercial cinnamon worldwide — bolder and more assertive than true Ceylon cinnamon. The standard in most global spice blends, baked goods and commercial preparations. India and China are the primary producers. Cassia bark is thicker and rolls as a single layer unlike multi-layered Ceylon quills.

Health Benefits

  • High cinnamaldehyde — powerful antimicrobial and antifungal properties
  • Shown to improve insulin sensitivity and regulate blood sugar
  • Anti-inflammatory and antioxidant polyphenol content
  • Traditional warming and digestive-stimulating properties in Ayurveda

Culinary & Industrial Uses

  • Commercial spice blends and masala powders globally
  • Baked goods, apple pies, cinnamon rolls in Western cuisine
  • Biryani and slow-cooked meat preparations
  • Commercial beverage and confectionery flavouring

Processing & Grades

Bark harvested from 2-3 year old shoots, dried and graded by quill length and thickness. Available as whole quills, splits or cassia powder. Coumarin content disclosed for all orders.
