About Cinnamon

True cinnamon — Cinnamomum verum — has a much more delicate, complex flavour than cassia with dramatically lower coumarin content, making it safe for daily consumption. One of the first spices traded from South Asia to the Arab world and medieval Europe where it was worth more than gold.
