About Ginger Powder

Dried ginger powder (sonth) has a different chemical composition from fresh ginger — the drying process converts gingerols to shogaols, which are 5–10x more potent anti-inflammatory compounds. This makes sonth medicinally more powerful than fresh ginger in Ayurvedic practice. Kerala Malabar ginger produces the finest sonth.
