About Mace
Mace is the lacey aril surrounding the nutmeg kernel — both from the same tree but with distinct flavour profiles. Mace is more refined and floral than nutmeg. It was among the most expensive spices in medieval Europe, leading to the Dutch East India Company's colonisation of the Banda Islands.
